The symptoms that you describe are similar to those caused by a pencil coil breaking down. If the Lambda sensor breaks down then the fuelling will be out of kilter but not as dramatically as you have described. If a coil has/is going down then the Lambda sensor may also have been damaged. I would look at the coils first Tom. Oh and I almost forgot, take a look at the small vacuum hoses running from the bottom of the Airbox to the two induction stubs as they seem to be made from left over rubber from Pnuemant (quick rot) tyres.

Fuel injection light? Soot on the Lambda sensor would only act as a mechanical barrier to its function, the real problem occurs when the soot is heated to an incandescent temperature on the surface of the probe. This is when thermal damage occurs. You can try substitutional diagnostics using a second hand probe (if you can find the correct one). Do you not have a cheap fault code reader? For my money they should have been supplied with the bike or built in to the LCD display. I got mine for £30 on e-bay. Did you check the hoses?
